Ketoprak (vegetables with peanut sauce)

1 block ketupat, cubed
150g tofu, cubed
1 small cucumber, shredded
bean sprouts, blanched
kangkung leaves, blanched
2 boiled eggs, quartered
fried shallots
fried kerupuk
1 shallot
1 clove garlic
2-4 red birds eye chillies
3/4 cup raw peanuts, fried
2 tsp palm sugar
thin tamarind liquid
1 tbls kecap manis

Pound together sauce ingredients with enough
tamarind liquid to make a runny sauce.
Dust tofu with cornflour and fry until crispy and golden.                          Recipe by kaki lima, Jalan Boisori
Layer onto two plates – ketupat, tofu, eggs, cucumber,                             – Ternate
sprouts and kangkung.
Pour sauce over the top, sprinkle with fried shallots,
drizzle with extra kecap manis, and garnish with kerupuk.
