Rojak is a sweet and spicy fruit salad common across Indonesia and Malaysia with wildly varying interpretations
1 red bird’s eye chilli
small pinch of trasi
big pinch salt
3 tbls fried peanuts in skin
2 tbls red palm sugar
1 tbls thin tamarind water
1 cup sliced flakes of fruit;
cucumber, firm papaya, green mango, pomelo,
rose apple, nutmeg fruit, raw white sweet potato,
star fruit…
Crush chilli, salt and trasi in mortar and pestle.
Add palm sugar, tamarind and peanuts – crush lightly.
Add fruit and mix well.
