Sambal Acar (vegetable pickle)

1 tbls rice vinegar
1 tbls sugar
1 birds eye chilli, sliced
1 large red chilli, sliced
1 large green chilli, sliced
1/2 cucumber, cut in matchsticks
1/2 carrot, cut in matchsticks
1 shallot, sliced

Boil together 1/4 cup water, a pinch of salt, vinegar and sugar.
Remove from heat and add all remaining ingredients – mix well.
Allow to cool completely before serving.
