Kentang Goreng Berlada (spicy fried potatoes)

500g potatoes, sliced in wedges
1/4 cup ikan bilis (dried anchovies)
5 large red chillies
3 cloves garlic
3 shallots

Pound or process together chillies, garlic and onions.
Fry potatoes until cooked and golden – set aside.
Fry ikan bilis until just crisp – set aside.
Fry chilli puree for 10 minutes. Add potato and ikan bilis.
Mix well.
