450g mackerel steaks
3 cloves garlic
2 large red chillies
1 tsp fenugreek seeds
2 stalks curry leaves
3 heaped tbls fish curry powder
1 tbls tamarind pulp, soaked in water
1 tsp sugar
1 onion, sliced
2 tomatoes, cut in chunks
12 whole okra, trimmed
Puree together garlic, shallots, chillies and ginger – set aside. Make a paste of curry powder with water.
Heat 4 tbls oil and sizzle fenugreek and curry leaves. Add pureed rempah and stir 5 minutes.
Add curry powder mix and cook well, adding water as needed.
Add about 3 cups water and bring to boil. Add tamarind, sugar, onion and tomato – simmer 20 or 30 minutes.
Add fish and okra – simmer 10 or 15 minutes.
