200g cod OR mackerel fillets
1 tbls red curry paste
1/4 cup coconut cream
1/4 cup water
2 tbls fish sauce
2 stalks green peppercorns
4 kaffir lime leaves, shredded
1 large red chillies, thinly sliced
1 large green chilli, thinly sliced
1 tsp sugar
handful Thai basil leaves
Heat 2 tbls coconut oil and fry fish, skin side down until cooked
– set aside.
Heat 2 tbls coconut oil, add curry paste and mix well.
Add coconut cream and remaining ingredients except basil.
Add fish – simmer 2 minutes. Add basil and serve.
