Moo Put Makhuea (baby eggplant with pork and basil)

1 tbls green curry paste
225g minced pork
2 baby eggplants, sliced thickly
2 tbls yellow bean sauce
1 tbls soy sauce
1 tsp sugar
handful Thai basil leaves
1 large red chilli, sliced thinly

Heat 2 tbls oil and stir in curry paste.
Add pork – stir.  Add eggplant – stir 5 minutes.
Add bean sauce, soy sauce and sugar – stir 3 minutes.
Add chilli and basil – stir and serve.
