Tort Man Plah (Fish cakes)

250g fish fillet
2 tbls red curry paste
1/4 tsp palm sugar
1 tbls fish sauce
1 egg
1 snake bean, finely sliced
5 kaffir lime leaves, finely sliced
butter lettuce leaves to serve
sweet chilli sauce to serve (see recipe)

Combine fish, curry paste, palm sugar, fish sauce and egg in
a food processor until smooth. With hands massage in beans
and lime leaf shreds. With wet hands form into 7 discs and
shallow fry in non-stick pan until browned.
