Yum Neu-a (Spicy beef salad)

200g rump steak
1 small cucumber, sliced
100g cherry tomatoes, halved
1 spring onion, chopped
1 bunch coriander, chopped
1 shallot, sliced
8 sprigs mint leaves
1/2 stalk lemongrass, sliced
3 kaffir lime leaves, shredded
1 large red chilli, julienned
2 baby eggplant, sliced
2 green birds eye chillies
2 cloves garlic
1 coriander root
1 tbls palm sugar
2 tbls fish sauce
juice of 1 lime

Pound together green chillies, garlic and coriander root                           Inspired by vendor in food court,

Barbecue eggplant and rump steak until seared as desired.
Rest steak 10 minutes then slice thinly on diagonal.
Combine all ingredients and toss gently with dressing to serve.
